I've very little knowledge about how privacy on website works. So, I want to get some more information about this scenario....
If I created a site and this is behind Cloudflare, what information about the site owner or the location of the serves can the users of the site find out?

cloudflare is ddos protection, not really privacy protection. Also they're spooky. If you want to hide, use njalla with a dedicated XMPP account.

Cloudflare doesn't matter. As long as you own a domain, your name can be found in whois-registries.

That's not a whois-registry. That's just some random website.
How do I get to the right who is registry?
It's a separate protocol. There are linux cli commands for it.

Privacy is all about the weakest link. Even if Cloudflare is configured well, things like WHOIS records, email headers, or misconfigured DNS can reveal details.
