I honestly, would love to do something related to music, I would love to learn how to play guitar and play occasionally at local coffee shops or something like that or, I would definitely do something related to writing, articles, shorts stories, a book whatever it is. imagine doing something you like without stressing about paying next month's rent or, without stressing about how food prices are going up and up

what the OP is practically asking is "what wud u do if money substitutes did not matter, and one cud exercise essentially limitless free will on a project that has a basis in reality & true care?"
with this correct and sensical rephrase, i wud dedicate more of my efforts to educating people about cleanliness of their mind & flesh; i think the lifespans will continue to shorten to the point where helping someone squeeze out one-two extra decades out of life will be a low-yield client;
i am looking for like-minded thinkers & tinkerers who are aiming for a 2x-10x increase in longevity, however unbelievable the methods are;

What I'm doing now. I try really hard to not make decisions based on the pursuit of money. More than anything I want to be useful and make things that I'm proud of.
If I had infinite time, I'd read, socialize, exercise, and pursue hobbies more.

If you are in that situation (congratulations!), there is a good book about this topic called The Joy of Not Working. It talks about different ways to enjoy your leisure time.
You have to prepare yourself for this scenario, and that takes time and self-discovery. You need to figure out what you truly enjoy, who you like spending time with, and so on.
I think I would focus on doing outdoor activities with my wife and our dog, playing tennis with friends, organizing Bitcoin meetups, and helping newcomers learn how to custody their sats the right way.

Because of Bitcoin I have more than enough money and can do the things I always wanted to do.

When you do not need to work for money work becomes a lot more enjoyable.
